
A few days back my husband told me that I havenโt baked any cake for quite some time. So yesterday I decided to bake this cake with whatever ingredients was available at home. Hubby loved it and kept asking what was it made of? Well it was just my regular egg free cake recipe. I just added maraschino cherries and sliced almonds in it. I wish I had more cherries to decorate its top๐


Ingredients
๐ 1 cup whole wheat flour
๐ 1 cup all purpose flour
๐ 1 1/2 tsp baking powder
๐ 1 tsp baking soda
๐ a pinch of salt
๐ 3/4 – 1 cup coconut sugar
๐ 1/2 cup melted butter
๐ 1/2 cup yogurt
๐ 1 cup milk
๐ 2 tbs vanilla extract
๐ 1 cup maraschino cherries
๐ 1/2 cup sliced almonds
๐ 1 flax egg ( 1 tbs flax meal + 3 tbs water; refrigerate for 10-15 mins)
๐Instructions
๐ Preheat oven at 360 F. Grease a baking dish.
๐Mix dry ingredients, except sugar. Set aside.
๐Blend butter, sugar and flax egg together.
๐Add vanilla extract, yogurt, milk and blend.
๐Add half the dry ingredients and mix. Add another half and blend properly.
๐Stir in cherries and almonds.
๐Transfer batter into baking dish.
๐Bake for 60-70 mins.
