These egg free buttery biscuits are also known as Tutti Frutti Cookies and are quite popular in India. They got their name from the popular Karachi Bakery in Hyderabad that was founded by Khanchand Ramnani, who migrated to India during Partition. Its first outlet was opened in 1953 in Hyderabad, India.

I ate Karachi biscuits for the first time in India few years back. Since then I have been in love with these sweet delights. So finally I decided to make these cookies at home and they came out really nice.
There are few things to keep in mind while baking these biscuits. I tried many fruit extracts but finally concluded that pineapple extract is the best one for these cookies. Apart from tutti frutti , you can also add nuts like cashews and pistachios.
Once the dough is ready, you can either make a log or roll it out and refrigerate. I personally like rolling it out on a parchment paper and then refrigerate it.

Ingredients

1 1/2 cups All Purpose Flour
1/2 cup Custard Powder
1/2 cup softened butter at room temperature
3/4-1 cup Castor Sugar (depending on how sweet you want it)
1 tsp Baking Soda
1 tsp Pineapple Extract
3-4 tbs milk
1/2 tsp Green Cardamom Powder
3/4 cup Tutti Frutti
1/4 cup chopped cashews
A pinch of salt

Instructions

Sieve flour and custard powder and set aside.
In a large bowl beat butter.
Add Sugar a beat with an electric blender or hand blender
Add milk, Pineapple extract and blend.
Add flour, custard powder, baking soda, green cardamom powder and blend.
Add tutti frutii, cashews; Blend and make a dough.
You can add a little more milk if you feel the dough is dry.
Transfer dough on a parchment paper and flatten it with your palm.
Cover it with another parchment paper and roll it out using a rolling pin.
Refrigerate for 30 mins to 1 hour.
Cut into your desired shape using a knife or cookie cutter.
Transfer into a baking tray lined with parchment paper.
Bake at 360 F for 15-18 mins till they start turning golden.
Take them out and let them remain on baking tray.
Once they cool down, store in an airtight container.
